Busy weekend.. cakes, cupcakes and back to school.

What a busy weekend I had. Made a cake, 12 cuppies, went out with the girls, to see Grease and then shopping for back to school. WOW where does all my free time go? It is 3:30 on Sunday and I am finally able to sit down for a few minutes.


I had a cake for Kristina that I delivered on Friday. Kristina is an on-line friend from The Nest. Friday was the first time I meet her, her husband Bobby and their adorable baby Ava (well she was sleeping but I did peek in at her and she is beautiful).


The cake Kristina choose was chocolate cake with Peanut butter filling. She wanted a pink simple designed cake. She choose pink and brown. She was sharing her birthday celebration with Kim and Steven ( who is in Bosnia). Kristina loved the cake and it was a joy and pleasure to make it for her.






I had some left over cake mix so I made some cupcakes. Elizabeth was going to Brooke's birthday party so I offered to make them for the party. I was practicing fondant roses for class so I added them to the cuppies. I really love how they turned out.



Hope everyone had a great weekend and a great back to school week. We have kids all over the place, Elizabeth is going into 3rd grade, Alex 10th grade and Amber is starting college.

Skillet Lasagna and Arugula Salad


Let me start by saying I do not really enjoy cooking. Jeff is the cook in our house and he does a great job. Our older kids also cook dinner at least one night a week.

Tonight I decided to make skillet lasagna. I found this recipe on the food network.

I modified the recipe a little by using jarred sauce. I used jarred mainly because I do not have a food processor. I know I could of used a blender but we liked jarred sauce. It was very good and easy to make. Jeff and Amber enjoyed it once they picked out the green stuff LOL.




Friday night Jeff and I had dinner at Maggiano's in Tampa. I enjoyed my meal but the best part of my meal was the arugula and tomato salad. While shopping today I bought some arugula and tomatoes and added squares of mozzarella cheese. Topped with a little Italian dressing. This salad was delish and I am already planning it for lunch tomorrow.


My design for Matthews first birthday!



This is my first attempt at drawing the design on the computer for a future cake. Matthew, my grandson will be 1 at the end of Sept and this is the cake his mom has choosen. The original cake is just one tier which will not be enough cake so I will be adding a bottom tier. The cake will also have a white bead border around the botton. I found the original cake on cakecentral and was made by allthingscake.

My first 2 tiered cakes- 2 in the same weekend!

I had the honor and privilege of making a cake for my moms 65th birthday celebration. I love my mommy and would do anything for her. Her party was luau themed. Her husband Allen stayed up all night to smoke meat for the party and we had plenty of sides. Her cake was buttercream with all fondant decorations. The bottom tier was Orange with vanilla filling and the top was Lemon with Key Lime filling (thanks Natalie). The cake was a huge hit and what's best is my mom loved it.


My sister and I also made 80 cookies for the centerpieces. This is not something I will be rushing to do again. We had a mass decorating day at my sisters house, this included, me, Missy, Jeff and Cassie with an assembly line of cookies and icing. The cookies with coconut flavored and were adorable but OH so time consuming.


I also made a baby shower cake for a co-workers niece. The request for this order was pink, butterflies and flowers. The butterflies were colorflowed with royal icing and I love how they turned out. The flowers were fondant. The cake per request was Vanilla with strawberry cream filling. I was told the mommy to be loved it. This was a very fun cake to make!

This was a super busy weekend, I managed to get it all done... they looked great and I had a great time at my Moms party!



This cake was made for my son Alex's 15th birthday. It was a surprise cake and he did not see the finish result until we were at the resturant. The white sign says mom where did I park the car. He will be getting his drivers permit soon. The fondant figures were molded to look like my kids. The boy in the pool has light brown hair and the girl laying on the mat has blond hair and purple glasses just like Elizabeth. This cake was chocolate with diced up reese's peanut butter cups mixed with buttercream. He choice the flavors and loved his cake.
